German Potato Salad

Recipe courtesy Jean Rodgers

6 White potatoes, sliced & cooked (I rarely, if ever, peel them)
2 Medium Sweet Onions, sliced thick (+-, inch)
4-6 Bacon Slices, diced
1/2 C Water
1/2 C Cider Vinegar
3/4 C Sugar
2 Eggs, beaten
1/4 t Dry mustard (optional)

-Brown bacon, adding onion when bacon is + done - drain/discard most of grease
- Mix liquids & dry ingredients real well
- Add to bacon in pan, simmer 5 minutes
- Pour over potatoes and mix well - gently
- Serve warm (not hot)

I've also used small redskins, quartered.

If you decide to use Yukon Gold potatoes, be aware that they cook fast and turn mushy if you're not careful.
